Because it is relatively tasteless and hardly sweet and therefore goes perfectly with coffee! Speaking of coffee: Due to the high fat content, pistachio milk froths like no other! The preparation:
- First, soak the pistachios in cold water for about 4 hours (even better: overnight).
- Then drain the water and rinse the seeds thoroughly.
- Then let it dry for a while!
- As a next step, put the pistachios in the blender with a liter of water and the vanilla pod or a pinch of cardamom and cinnamon. Add the maple syrup or the dates and blend on high until no more chunks can be seen.
- Then pour the liquid through a very fine sieve or ideally a nut milk bag to remove the nut pulp.
- Then enjoy or store the pistachio milk in the fridge. It keeps for three to five days.

Pistachio milk is definitely a great, environmentally friendly alternative to milk, which we are now making a firm part of our diet.
